In the Asheville, North Carolina and Gatlinburg/East Tennessee areas. I am
new to the business, originally from Louisiana, and have lived in East
Tennessee for a little over 7 years now. The emphasis will be on cajun and
creole food. Any advice or tips would be greatly appreciated. I am currently
formulating a business plan for the business. Glad to be here!

the details and determine if this business is viable.
You say you are new to the business, but hopefully you have some restaurant
experience. Being a good cook is one thing, but being a good business owner
and understanding how to run a restaurant is another animal in itself. Even
though you're talking food truck and not brick and mortar restaurant you will
still need insider info on food vendors and restaurant equipment.
You'll need information on tax filing, permits, payroll, food
handling/sanitation, etc. Research as much as you can then use the services
of your local SBDC (Small Business Development Center) office.
