Always get employes to sign paperwork, even with freelancers I make them at least sign a NDA. For any type of work, a standard contract should work. There are loads of free templates on the internet.
Just write it in the reason you stopped working with and paying him/her..
Everyone has a portoflio, also when he/she will try to get a job, he/she will have not a good referrences from you..
I think is not very easy, since he/she can just not tell that he/she was working with you, but you can try what I wrote above ;)
It would be hard to prove much on a verbal contract. You should document the circumstances any time someone leaves your employment, if it is on friendly terms have them provide you a letter of resignation.

Most states provide a dispute period after they provide a eligibility determination. You should show up to all hearings and be well prepared with the facts, an attorney is also an option.

Anti discrimination laws are becoming increasingly common and more enforceable. An employer needs to be very careful in how they handle dismissing staff - this is one reason that many small businesses dont get beyond owner/operator status - once ou get into hiring staff the complexity of your business increases dramatically.
AS far as I know, most of the State unemployment agencies will have an option for emplyers to contest the unemplyment claims from their former emplyees. You can refer the state UI agency website and navigate to employers section. But this works if the emplyer has already file for unemployment. If they have not done so, then there is nothing much you could do, but in this case, you don't have to worry much anyways.
Ok.. the idea is to find out a truth without letting this person know you are looking. Maybe your best bet is to be there and witness the event as it happens.

Verbal Contract Law

Do you mean it could cost the company in a way that is outside the scope of this particular case?
