Need direction to get where I'm going!

I am seeking advice on the best path for re-opening a successful pizza restaurant that I was a major part of as far as the consistency of the food and the elevated attitudes of the employees goes and of course LABOR. The original owner had a major fallout that resulted in him having to close the restaurant. He has recovered since.
The P & L statements for the restaurant are astounding and we opened 3 restaurants in four years, we had a well marketed and customer followed system, from the food to the atmosphere and ambiance.
I could go on for a while on different things about it!
So any and all information for re-opening a successful pizza place with the P&L's to prove it I am in need of please. Thank you so much for all your time. Peace
