I was wondering if there are government grants out there to cover the fees for a patent for new product? Or maybe a grant so we can research and build a prototype?
I have never heard of such a grant. There are government grant programs like SBIR & STTR. These grants are funded by the 16 or so departments of the US government. But, these departments will request a certain product or service. Then, businesses write a proposal on how they can provide that specific product or service and, if accepted by the department, will get funded. Plus, the department will usually be the first customer (as that is really what they are after).
You can search these departmental request and see if your patent or product fits any of their requests.

That would have to be privately funded, and the only people that would be interested would be your own competiton.
Try getting your funds from family.
