Thinking of opening a restaurant

Hi there,
My husband has been a manager of a restaurant for 25 years. He runs the restaurant he's at by ordering all supplies, managing staff, making the deposits and everything that goes with it. Our son has worked under him for 5 years. He is finally thinking of opening his own restaurant now, but we are not clear as to how or where to begin. Should be be looking at 'where' first and figure out how to get the loans after that, or should structurizing first by getting TAX and Employee paperwork requirements in order be priority. Is there a book or someone we should be working with to begin this process. We really are inexperienced but very eager to learn. Absolutely ready for the plung and to do what it takes. Any advice from an experienced restaurant owner in Mass would be helpful! Thanks so much!
