What type of business should I be

I am a professional engineer in Southern California with over 40 years of experience and I am thinking of setting up my own company for the remainder of my career. I have done a fair amount of research into different ways to set up a firm and am undecided on which is the best way to go. I do not want to be a self proprietor because of the risk of exposing my personal assets to any liability. I don't intend to hire anyone so it will be a firm that consists of me. From what I can tell, an S-corp sounds reasonable, but I don't get this meeting and minutes requirement. Who do I meet with? Myself? And all the paperwork and forms I would have to fill out! An LLC sounds OK, but there also is the LLC as an S-corp option that has me confused and bewildered. I contacted the local SBDC and have set up a meeting , but have to wait a month. I am not sure I want to wait that long. Can you help me?
